Pickled vegetables production usually consists of the following steps:

Preparation of Vegetables: Vegetables are peeled, seeds are removed, cut, cleaned and washed.

  • Preparation of Pickle Juice: Pickle juice is obtained by preparing a special mixture of vinegar, water, salt, spices and other flavorings.
  • Boiling the Pickle Juice: The pickle juice is boiled and the vegetables are dipped in this hot liquid.
  • Fermenting in Pickle Juice: Vegetables are fermented and stored in pickle juice.
  • Packaging: Fermented vegetables are filled in glass jars to be sterilized. It is then labeled and packaged.

Pickles can be served as a side dish with meals and consumed alone as a snack, or they can be used in sandwiches and burgers.
